* Instead of water in simple syrup, use pineapple juice. Combine equal parts pineapple juice and demerara sugar over heat, once boiling, remove from heat and add 1 cup of chopped ginger, 15ml mint and peel of 1 full lemon. Let sit until cool, fine strain and bottle, refrigerate until ready to use. This recipe would be for 500ml of pineapple juice.
Combine ingredients in a mixing glass, add ice and shake hard for approx. 8-10 seconds. Add 30-60ml of soda to a chilled Collins glass then fine strain into a chilled Collins glass over ice. Garnish with two straws and an edible flower.
