Bartender Francis Ndung'u of Kenya is joining the fight against the spread of the opuntias cactus that threatens the live stock of pastoralists in his community, by using the juice of the harvested plant in his Ketel One ‘Prickly Pear’ Martini.

Ingredients

Ketel One Vodka 40 ml
prickly pear cordial 80 ml

Garnish:
dehydrated prickly pear

Prep Ingredient Recipe & Method

1. prickly pear cordial
ingredients
.prickly pear juice 500g, castor sugar 500g, water 200g, citric acid 20g & white pepper 5g
prep method
heat the water into a pan until it boils then pour in the citric acid while stirring until it dissolves completely then put in the castor sugar and white pepper while stirring till it dissolves put in the prickly pear juice then put off the heat. put the cordial aside to cool and later put it in a clean container then store in the refrigerator.

Garnish Method:
cut the prickly pear in wheel form then dehydrate in a dehydrator for 12hrs

pour the Ketel one vodka and the prickly pear cordial in a shaker in no specific form, put ice inside the mixture the shake lightly and strain into a martini glass. Garnish with a dehydrated prickly pear on top of the cocktail.
