Under the Sea
• FinlandBartender Liisa Lindroos of Finland is spearheading improvements in the ecosystem and fighting pollution in the Baltic sea with her Ketel One ‘Under the Sea’ cocktail, by inspiring increased usage of bladder wrach seaweed.
- "Bartenders of the Baltic Sea Finland is famous for having among the purest water in the world which makes us proud. Yet, our country shares coast with one of the most polluted seas in the world, the Baltic Sea. Its bad condition is a result of human acts over the years and now it’s time we change that. Bladder wrack is one of the key species from the coastal zone of the Baltic Sea. It offers cover and nutrition for many organisms. Due to the eutrophication, you find less amounts of bladder wrack every year. To support the ecosystem of
- the sea, we have to make sure bladder wrack grows in the Baltic Sea for the future. I created a Ketel One campaign in collaboration with two local Baltic Sea foundations that takes part in many cocktail bars around Finland. The idea behind my campaign is to create a tasty cocktail combining Ketel One and bladder wrack. Due to its peculiar appearance and lack of availability, bladder wrack is not commonly used. However, it is perfectly edible and packed with minerals and vitamins. The goal of my campaign is to inspire increased usage of bladder wrack in common households to
- create new market values and farming opportunities to help the sea’s ecosystem in the Baltic Sea. With my cocktail I hope to show an example and help the guests find bladder wrack as a new vegetable. As a supporting act and inspiration, I garnished my cocktail with bladder wrack salt to take home. "

Under the Sea
Ingredients
Ketel One Vodka 60 ml
Bladder Wrack soda 120 ml
Garnish:
Bladder wrack salt
Prep Ingredient Recipe & Method
Bladder wrack soda:
500g Water
100g Sugar
5g Citric acid
5g Malic acid
70g Bladder wrack
5g Dill (dried)
7g Grated Horseradish
Cook together for 10 minutes. Cool down and strain through filter paper. Carbonate and bottle up.
Bladder wrack salt
Collect used bladder wrack and dry it in a oven in 55 degrees over the night. Blend dried bladder wrack with sea salt flakes in a mortar and pestle. Use it as a rim or serve for take away.
- Cool down highball glass with crushed ice or store in a freezer until its ice cold.
- Measure 60 ml Ketel One and 120 ml bladder wrack soda in to highball glass.
- Fill the glass with ice.
- Stir a cocktail lightly
- Garnish with bladder wrack salt
