Bartender Liisa Lindroos of Finland is spearheading improvements in the ecosystem and fighting pollution in the Baltic sea with her Ketel One ‘Under the Sea’ cocktail, by inspiring increased usage of bladder wrach seaweed.

Ingredients

Ketel One Vodka 60 ml
Bladder Wrack soda 120 ml

Garnish:
Bladder wrack salt

Prep Ingredient Recipe & Method

Bladder wrack soda:

500g Water
100g Sugar
5g Citric acid
5g Malic acid
70g Bladder wrack
5g Dill (dried)
7g Grated Horseradish

Cook together for 10 minutes. Cool down and strain through filter paper. Carbonate and bottle up.

Bladder wrack salt

Collect used bladder wrack and dry it in a oven in 55 degrees over the night. Blend dried bladder wrack with sea salt flakes in a mortar and pestle. Use it as a rim or serve for take away.

- Cool down highball glass with crushed ice or store in a freezer until its ice cold.
- Measure 60 ml Ketel One and 120 ml bladder wrack soda in to highball glass.
- Fill the glass with ice.
- Stir a cocktail lightly
- Garnish with bladder wrack salt
