Punch Collective
Ingredients
Ketel One Vodka 45 ml
Mamájuana 15 ml
Cordial Punch with Mango, pineapple,strawberry 30 ml
Garnish:
Cookie made with cordial fruit pulps
Prep Ingredient Recipe & Method
1 1/2 oz Ketel one,1/2oz Mamajuana which is a Dominican liqueur 1oz cordial of Three Fruits Mango, Pineapple and strawberries
Cordial Punch for 500 ml
100ml Strawberry Juice
100ml Pineapple Juice
50 ml of mango juice
40 ml of apple juice
10 g Citric acid
200 g of sugar
All mixed in cold and strained.
Garnish Method:
Biscuit from Dehydrated Leftover Pulps:
Place the leftover pulps from the juices used in the Cordial in a blender.
Add 50 ml of water to liquefy all the pulps.
Then pour this mixture into a container and add sugar to 20% of the weight of the mixture obtained.
With a spoon, mix everything until a homogeneous paste is created.
Place this paste in a Dehydrator on baking paper and let it dehydrate for 18 hours
Then cut to taste
Place all the ingredients in the shaker, shake and double strain over a copa coupe glass with an ice cube
