Ingredients
Serves:
- 1.5 oz Ketel one Vodka
- 1.5 oz Soda Water
- Top With Ginger Foam
- Garnish with a sprig of mint
15.8 grams of alcohol per serve
Method
Start with an enamel mug. Pour Ketel One Vodka, then add the fresh lime juice, then add ice. Top up with ginger beer. Stir the ingredients in your glass and finish with a lime wedge and sprig of mint.
Ginger foam recipe:
4.25oz Ginger juice
3.25oz Raw honey syrup (1:1)
1.5oz Water
1 pinch of sea salt flakes
1 gelatine leaf
0.75oz lemon juice
whites from 2 eggs
Method to make the foam:
Place gelatine in an ice-cold water bath to soften. Pour ginger, honey syrup, water and salt in a saucepan and heat gently (36°C). Squeeze excess water from the gelatine and stir it in your ginger syrup until dissolved. Cool down the mix before adding the lemon juice and egg white. Give it a good stir and pour it in a cream siphon. Charge siphon with 2 cartridges and refrigerate for a minimum 30min before use.
